The company was founded by Scott Bridi, a chef, butcher, culinary instructor, and maker of charcuterie for over 15 years. Scott Bridi loves Italian, French and German salami, and in his hand-crafted salami it is possible to taste cross-cultural cuisines and traditions. Brooklyn Cured Salumi are made with humanely raised animals without the use of antibiotics or hormones. The salami are cured with sea salt and without the use of synthetically nitrites or nitrates.
