In 2003 Jasper Hill Farm aged a series of young cheeses from Cabot Creamery into an artisanal clothbound cheddar. Thus Cabot Clothbound was born! This natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish.
