In 2003 Jasper Hill Farm aged a series of young cheeses from Cabot Creamery into an artisanal clothbound cheddar. Thus Cabot Clothbound was born! This natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish.
Pair alongside sparkling apple cider, pale ale, or rich and oaky Cabernet Sauvignon
