Parmigiano Reggiano DOP Vacche Rosse is produced in Emilia-Romagna in the hilly and mountainous areas between the Po and Tyrrhenian rivers, with milk from Rossa Reggiana cows that feed exclusively on locally grown forage. The Rossa Reggiana is a native breed of northern Italy that risked extinction in the 70s. \nThe Red Cow milk has a high percentage of casein, ideal for cheeses that go through long aging periods.
