Brabander is made with the milk of Saanen goats and aged for eight months. Betty Koster buys young wheels from Althea, a cooperative specializing in goat husbandry in the lush green region of Brabant. She works with her oppliger to age these wheels at a slightly higher temperature-resulting in a sweet, fudgy complex profile. This Gouda pairs perfectly with stone fruit, pear, Caribbean Rum, or blonde ale.
