Each wheel of Parmigiano Reggiano DOP is made from fresh unpasteurized cow's milk, rennet, and salt, and is aged for 24 months. After carefully selecting each wheel of Parmigiano Reggiano DOP from a small selection of producers in the Tuscan Emilian Apennine region. With a straw yellow, finely crumbly texture, on the palate it is well-balanced, sweet and yet savoury with fresh milk notes. This is the most versatile ageing, suitable to add a delicate note to dishes without being overwhelming. Ideally paired with good Franciacorta sparkling wine and a pear and balsamic vinegar sauce. Enjoy grated over pasta and risotto, or simply savor on its own with prosciutto crudo or a drizzle of balsamic vinegar from Modena.
