This AOP cheese is made from raw cow’s milk. Records show that milk from around the stunning villages of the Gruyère region of Switzerland has been hand-processed to make this characterful cheese since before the year 1115, and to this day it remains unparalleled in its complexity. This particular offering has been aged six months by the affineurs at Gourmino and is a true exemplar of the form. Le Gruyère has a nutty flavor with hints of orchard fruits, such as apples and pears. The initial fruitiness gives way to more robust beefy and brothy flavors.
