Salame al Tartufo is a hand-crafted salame made using heritage Berkshire and Duroc pigs raised on family farms, seasoned with black truffle salt, minced black truffles, and black Tellicherry pepper. In this salame there are no artificial truffle oils, only minced black truffle and truffle sea salt from Tuscany. Based in Chicago, Tempesta Artisan Salumi is a small and artisanal charcuterie company. Antonio Fiasche founded the company a few years ago with the goal of keeping and sharing the Fiasche family tradition of making Calabrian 'nduja spread and salumi. Tempesta Salumi are made with heritage breed animals that are raised humanely, fed a vegetarian diet, and without the use of antibiotics. Tempesta products do not contain synthetically produced nitrates or nitrites, but only those which are naturally occurring in sea salt.
