The end result is a fresh, better tasting cut of meat and one that can be traced back to the healthy animal it came from. Their personal visits to and selection of these top local farms stem from their mission to create a healthier butcher shop. Through a highly selective process, Harvey’s cuts come from nine farms, eight of which are 150 miles or less from Washington, DC.
